PIES

Guess who baked a Swedish Apple Pie this morning....ME! Yep, it is gonna be awesome! The Raj and I are off to the country to dine with friends this evening. I also picked up all my clothes which I had been dropping on my floor since new years! Can you imagine? Oh....I bet you can.

The Roller Derby last night was a hoot, but the most exciting part was running in to this guy HWel and I knew from school...it was so crazy....of course I couldn't remember him at ALL as I so elegantly stated..."Gosh V, I just don't remember you at all!" :) I then invited him to my 30th birthday party this summer and he responded with...."I went to one of your birthday parties at Bay Beach-" and I still had the "I still don't remember you" look on my face! Whatev, HWel was smart and we got his number, so we're totally gonna call him.

I'm so glad I'm inviting people to my birthday party 6 months out! lol Uncle J-- the birthday party is still on, Sat. Aug 11! THEN the real troopers can party again on my REAL birthday Aug. 15th! The big 30 is coming and it will be fabulous! Anyone who reads this blog is invited!

Cookies and Muffins

  I'm BAAAACK. Let's get right into it! To make a dumb story long- to make a long story dumb? A few weeks ago I saw this cookie magazine at Woodmans and I was like I. Want. that. Then I saw it cost $12.99. No.  I also know cookie recipes are onLINE, but boring. There's just something fun about looking at beautiful cookie pictures! Anyway, I went home, searched the library and put 2 Christmas cookie books on hold. A week later I got my books and what a disappointment. Boo. No good recipes in either of them. TODAY I'm at the grocery store and there she is, Taste of Home Holiday Cookies and Baking!!! And I was right, within the 1st 5 pages, there were 4 cookies that looked amazing. Even MORE amazing was page 15 where I found the cranberry orange cookies- cause I had cranberries in the fridge and randomly bought an orange at the store today! It was destiny! Canoeing down the Lower Zambezi

The group, ours and locals going on to the car ferry.  Entrance to the park Dang, what are these birds, I think they are Camden, or Carmen Bug Eaters? or something. Very pretty. The first African elephant I saw! Much Larger than Asian Elephants Who is that lurking in the water??  Some Hippos! Gorgeous stork (I think?) Another elephant. I wonder if he is older, as shown by his color variation? Me reading the book that the new parents (M and R) gave me! Also, notice the 3 beverages. The one in the glass is called a Malawi Shandy and is great. I think it's ginger ale, bitters and...maybe just that. A Rock Shandy is with lemonade instead of ale.   The evening cruise, didn't see nearly as much wildlife, but this guy was yawning.  Zambian Sunset! A baobab tree. Very cool. Mutinondo

Whoa! What a cool place this Mutinondo  was!  It is is a woodland, wilderness area NORTH EAST of Lusaka about 10 hours by bus. (Sorry about the yelling, that is a little shout out to my friend, you know who you are) (Also,  let me know if the link doesn't work) There were these gorgeous look-out points and mountains....well, large granite hills, but they were steep enough and we climbed up 2 of them. It took about 30 minutes to get to the top of each.  In the top video I'm reaching the top of the mountain!  You can hear our cool driver Mr. K cheering? :) me on!  These photos are in no order exactly, but I'll talk a little about each one!
